Harvested at 23 brix in late August of 2020 from BOTTAIA Winery Estate Pecornio vineyard.
Stainless steel fermented, shipped to Weibel for Charmat method secondary fermentation.

Pairs excellently with dishes with goat cheese or anything from the raw bar - from oysters to sushi.
Not to be confused with the cheese of the same name, Pecorino is a white Italian varietal native to the eastern coastal region Marche, (East central Italy- Northeast of Rome, between the Eastern slopes of the Sibillini Mountains and the Adriatic Sea) where sheep, or pecora would graze through the vineyards.
