Tasting Notes
Fresh cracked pepper, currant, black walnut + blueberry preserves
Production Notes
Fruit was harvested at peak ripeness to balance acidity with sugar content. Wines was fermented in stainless steel, then put into large format cask and aged for 2 years before bottling to allow the acid and tannins become in balance and soften just enough to let some fruit characteristics come forward.
Food Pairing Notes
The dryness of the wine met with the firm tannic structure and acidity need something fatty to match - think ribeye steak, duck breast with cherry glaze or for a cured meat option, capicola.
Other Notes
Sagrantino grape was introduced to our vineyard in 2016 making this 2019 vintage our first ever release of the varietal.
