Cherry-cola, juicy blackberry + vanilla
Harvested as one of our last red grapes at peak maturity to allow for a fruit forward, juicy wine balanced with tannins and acid suited for aging.
This wine was fermented with oak and was placed into cement once drained and pressed. It spent some time in cement tanks to add to its minerality and finished out in oak.

Rich meats, steak + sautéed veggies. Lasagna Bolognese or spicy cured meats such as coppa or soppresata.
